The vineyards are located on the south-western flank at the foot of Ravensburg Castle and “look out” over the village of Sulzfeld. The southern slope below Ravensburg Castle is shaped like an amphitheater and has a depression, a “Löchle”. This gives the site a warm and sheltered microclimate. It stretches from 190 to 260 meters above sea level with a gradient of 10 to 40 percent. The soils are multi-layered and consist of reed sandstone and gypsum keuper.
The grapes are carefully harvested by hand, with several harvesting passes ensuring that only ripe and undamaged berries reach the cellar. At the winery, they are carefully sorted and fermented in small containers as whole berries and whole grapes in wooden cuves. The aim is to produce fruit-intensive, complex, persistent Pinot Noirs with a fine tannin structure. The malolactic fermentation takes place in barriques, where the wines mature for 8-12 months.
