Burg Ravensburg wines come from vines rooted in mineral-rich, warm gypsum-keuper soil around Ravensburg Castle. The outstanding quality of the vineyards and the preferred topographical location result in wines full of character that delight with their fine minerality, ripe fruit and persistence. The grapes are gently harvested by hand, carefully sorted and fermented in small vats as whole berries. The goal is to obtain clear-fruited, elegant, persistent Pinot Noirs with a fine tannin structure. The malolactic fermentation takes place in used barriques, in which the wines age for 8-12 months.
