Burg-Ravensburg wines come from vines rooted in mineral-rich, warm gypsum keuper soil around the Ravensburg. The outstanding quality of the vineyards and the preferred topographical location result in wines full of character that delight with their fine minerality, ripe fruit and persistence. The grapes are gently harvested by hand, carefully sorted and fermented as whole berries in small containers. The aim is to produce clearly fruity, elegant, persistent Pinot Noir with a fine tannin structure. The malolactic fermentation takes place in used barriques, in which the wines mature for 8-12 months.
